Lent Recipes: Low-Carb Foods for Lent

By April 4, 2014

Many of the staple foods of Lent are chock full of carbohydrates—pasta, bread, potatoes.Zesty grilled shrimp, © Daniel Troutman Photography, via Laura Dolson, licensed to About.com, Inc. Abstinence from meat can present a real challenge to those (myself included) who find that more carbs equals more weight. While the point of our Lenten fasting is different from dieting, it still seems a bit odd to end Lent a few pounds heavier than when we started.

That's where Laura Dolson, the Expert at About Low Carb Diets, comes in. Laura has compiled several lists of low-carb recipes that are perfect for Lent, including fish and seafood recipes, egg and tofu recipes, vegetable recipes, and more. You can find all of Laura's recipes, as well as recipes from other About.com Food Experts, in Lenten Recipes: Meatless Recipes for Lent and Throughout the Year.

I really do not see the “big deal” regarding no meat fridays during lent. Eat a great pizza loaded with artichokes, spinach, lots of other veggies….peppers, olives (all kinds, calamata, black, green etc.) and top with plenty of sundried tomatoes and shredded cheese! Now…is that so bad? ;)
